Meet the Restaurant Manager

As part of the reopening, we spent some time with our Restaurant Manager, Cally Cross, who brings over 30 years of hospitality experience to the Weyhill team. Cally’s passion for great service shines through in everything she does, from championing her hardworking team to recommending her favourite dishes, like our focaccia open sandwiches or a classic sausage and bacon breakfast. She’s especially excited to see how the refreshed space will help the team deliver an even warmer, more attentive experience for every guest.

Cally also shared her appreciation for the support customers have shown throughout the refurbishment, and she’s looking forward to welcoming everyone into a restaurant that feels fresh, comfortable and full of character. It’s this blend of thoughtful design, delicious food and genuine hospitality that makes a visit to Weyhill something to look forward to.

The Story Behind the Name

Edwin & Betsy’s takes its name from Edwin and Betsy Hillier, the founders of Hillier Nurseries, whose story began back in 1864. Edwin Hillier was a young gardener with a deep love for plants and the outdoors. Starting with a small florist’s shop and nursery in Winchester, Hampshire, he built the foundations of what would become a thriving family business. By his side was his wife Betsy, supporting him every step of the way. Together, they shared a passion for growing and created something remarkable from very modest beginnings.

More than 160 years later, Hillier Nurseries and Garden Centres remain a family‑owned company, still guided by the values Edwin and Betsy believed in: care, quality, and a strong connection to people and nature. Edwin & Betsy’s celebrates those roots, offering a comfortable, welcoming place to relax and enjoy good food made with care.
